Chef Jim Crouch, trained by European Chefs, is well known across Canada for his Culinary skills, Gold medal ice carvings and culinary competitions. In 1989, Chef Jim Crouch was awarded the prestigious New Brunswick Chef of the Year Award.

Having been tutored by European Chefs, gained valuable experience working in prestigious hotels including Empress Hotel on the inner harbour in Victoria, Banff Springs Hotel in the Canadian Rockies, Chateau Champlain in Montreal, World Famous Royal York Hotel, and Atlantic Canada's Premiere Resort, the Fairmont Algonquin.

Chef Jim Crouch has lectured and taught advanced culinary techniques as well as given seminars in various colleges, universities, and judging of student competition.

Enjoy the Private Dining Room for groups of eight or more. Your hosts will take care of arrangements whether it is a special occasion or just a night out with your friends. A stand up host bar can be enjoyed in our reception area.

The Rose Garden Dining Room is the perfect setting to celebrate family reunions, Thanksgiving dinner, Christmas parties, and more.

The Inn's location is perfect for exploring the town by foot. Walk along the ocean, view some of the world's highest tides, skip stones at the water's edge, try kayaking on beautiful Passamaquoddy Bay. Stroll to see the murals of the water tower and Cockburn's Drug Store. The specialty shops, boutiques, and galleries wait to tempt you.
The Inn on Frederick, housed in an historic building constructed in the mid 1800's by one of the first Castine Loyalist Families named Pheasant. The newest renovations were added by the Chef Jim Crouch.
This recently renovated 1840's Country Inn offers "Old World Charm" attractively decorated with an elegant yet comfortable combination of period and modern furnishing that will take you back to the turn of the century when this property became a landmark serving the community for over 150 years, mostly at the present save easy site. (One young summer employee who worked there in the 1940's later became Prime Minister of Canada, the Rt. Honorable John Turner!)
